Double Pepper Cornbread
Ingredients:
- 1 cup whole wheat pastry flour
- 1 cup corn meal
- ⅓ cup cane sugar
- 1 tbsp baking powder
- ½ tsp Himalayan salt
- 1 cup coconut creamer
- 1 cup apple sauce
- 1 tbsp apple cider vinegar
- 1/4 cup of Kite almond vanilla yogurt
- 1 red pepper, diced
- 1 jalapeño pepper, diced
Directions:
- Pre-heat oven to 350F. Lightly oil bread pan with avocado spray.
- Mix dry ingredients (flour, corn meal, cane sugar, salt and baking powder) in a large bowl thoroughly.
- In a separate bowl, combine coconut creamer, apple sauce, apple cider vinegar, yogurt and peppers.
- Combine wet and dry ingredients.
- Pour ingredients into large cast iron skillet.
- Bake for 25 mins or until an inserted toothpick comes out clear.
- Voila! Cornbread that tastes like cake!!
